WATER SOURCE : Andean snow melt, deep well, drip irrigation
SOIL : Dark, rich, volcanic soil. Flat terrain. Good drainage.
CLIMATE : Warm, sunny days promote ideal growth, and cool nights slow the conversion of stored sugars.

HARVEST : Grapes are selected and harvested by hand in April, 2017. Grapes sorted by quality into small bins in the field.
Tasting Note
From the Pablo Neruda poem 'Ode to Wine' - "But you are not only love, fiery kiss, or burned heart, wine of life; you are the community of man..."
A smooth and sophisticated wine. A beautiful intense purplish red color. A nose that reflects a higher percentage of ripe fruit and spices can be felt shortly after pouring, intensifying as the wine breathes. In its mouth, the velvety flavor of Cabernet opens to complement its impressive bouquet. Firm and pleasant tannins provide a medium body and a light volume.
Production Technique
WINEMAKER : José Antonio Bravo von Bischoffshausen
PROCESS : Alcoholic fermentation is carried out in a stainless steel tank, for approximately 13 days, with a regimen of 2 pump-overs per day, no correction of acidity. The wine is then transferred to French oak barrels for malolactic fermentation. The process finishes with a cleanup and addition of sulfites.
AGING : 15 months in French oak barrels, 50% new oak

Day One: Bright. Well-saturated ruby with purple undertones. Consistent to the meniscus. Moderately viscous.
On the nose, the wine has subtle notes of sour cherry, cassis, pink rose, vanilla and caramel.
On the palate it is mid-weight, chewy and gripping with medium plus tannins, medium alcohol and medium minus acidity. The finish is moderate with light fruit and oak notes.Day Two: Bright notes of cherry, cassis, white mushroom, cedar, vanilla and campfire emerge. The palate is chewy and oak-dominated.
Day Three: Interesting new notes of black olive and red plum emerge to compliment the cedar and cherry. The tannic grip remains, and the finish is moderate.
