WATER SOURCE : Andean snow melt, deep well, drip irrigation
SOIL : Dark, rich, volcanic soil. Flat terrain. Good drainage.
CLIMATE : Warm, sunny days promote ideal growth, and cool nights slow the conversion of stored sugars.

HARVEST : Grapes are selected and harvested by hand in April, 2018. Grapes sorted by quality into small bins in the field.
This varietal disappeared from Médoc after the outbreak of phylloxera in the mid-nineteenth century. It reappeared in Chile at the end of the 20th century.

This wine has a beautiful, intense, deep red color, with nice violet notes. It has pleasant aromas of fruit, ripe currants, hints of plum, chocolate and coffee, soft and pleasant toasted, fine notes of spices. The flavors reflect the character and terroir of Carménère: the refreshing influence of the Andes mountain range in winter, minimum rainfall during the growing season and hot summers.
Medium soft-bodied with good structure, tasty, good acidity and soft tannins present and pleasant, especially to accompany mature cheeses, sweet and sour sauces, lamb, chicken and roast meat, it also pairs well with pasta.

PROCESS : Alcoholic fermentation is carried out in a stainless steel tank, for approximately 13 days, with a regimen of 2 pump-overs per day, no correction of acidity. The wine is then transferred to French oak barrels for malolactic fermentation. The process finishes with a cleanup and addition of sulfites.
AGING : 18 months in French oak barrels, 33% new oak

Day One: Bright. Moderately-saturated ruby red to clear at the meniscus. Moderately viscous.
On the nose, the wine is clean and has notes of mulberry, blueberry, cassis, pastry, graham cracker, nutmeg and white chocolate.
On the palate it is medium-bodied with moderate plus tannins, moderate alcohol and moderate minus acidity. The finish is short and the mouth is left dry.
Day Two: Along with the dark berry notes, mushroom, sage, squash and cedar emerge. The texture is still chalky and acidity/freshness low.
Day Three: Cherry, strawberry, tangerine and white rose emerge. The wine now is supple and smooth, with a moderately long, dry finish.
